FLOURLESS CHOCOLATE, DATE & ALMOND CAKE

INGREDIENTS
6 egg whites
250 grams of dark chocolate
250 grams of pitted dates
250 grams of roasted almonds (with skins)
Half a cup of icing sugar
Method
Chop up chocolate, dates and nuts. I put the chocolate and nuts in the food processor and cut up the dates by hand.
Beat egg whites until stiff. Gradually add sugar. Fold in almonds, chocolates and dates. Place mixture in foil lined greased 23 cm spring form tin. Bake at 180C for 45 minutes.
Allow to cool, then put it in the fridge.
Served either as is, or cover with whipped cream and garnish with chocolate or strawberries or whatever you wish.
